Black Oil Ramen
Black oil ramen is ramen made with burnt garlic.
Black oil is a black flavored oil made by slowly frying garlic in lard or vegetable oil, then filtering it after it has been burnt.
Adding this oil to the soup creates a fragrant and deep flavor.
It’s so delicious that I often go there on my way home from work.
